皮蛋

翼豆

做法
1.大干貝放置保鮮袋,泡水解凍。
2.解凍後,把大干貝切成四等份塊狀。

3.皮蛋切塊狀。

4.翼豆折一折成一口大小。

5.油鍋放入油加熱,放入蒜末、薑末爆香。

6.接著放入皮蛋小火煎一下,煎到蛋黃稍微定型,不黏黏的感覺。

7.放入翼豆拌炒。(遇熱時,翼豆會縮水一下,顏色也會變得比較暗沈)大火拌炒一下,翼豆要炒到他邊邊都萎縮了才算有熟喔!

8.放入干貝拌炒,半熟時加入醬油和味霖(兩者先調和)。

9.炒至水分收乾一些,干貝8到全熟階段即可,起鍋前灑入一點鹽巴。
